How could I start a new post with putting a picture of one of the cats. Monkey is the funniest sleeper.

This post will be mostly about some of the food that we’ve cooked recently and, as usual, will include the mistakes as well as the successes.

Quinoa and Black Bean soup

John made this last week when it snowed. We are having a very warm spring, but still got some snow. It was quite lovely and we enjoyed being inside and eating this great meal. We had to make a number of adjustments (no chipotle peppers, fresh tomatoes, green peppers, or cilantro) but it still turned out great! John got the chives from the garden. The first harvest of the year 🙂

We usually like to take one of the cats out with us when we do work outside. Monkey did not like the harness as you can see.

As an Easter treat I decided to try and make horchata. I got what looked like a good recipe (http://www.loveveggiesandyoga.com/2012/03/homemade-horchata.html) and started everything Saturday night. As I was straining the soaking rice and almonds, I had a little accident.

One corner of the cheesecloth got away from me and ground up rice/almonds squirted all over the place. All over me. All over the floor. All over the table. All over the walls. Unfortunately this was just 5 minutes before church started and I was all dressed and ready to go. We were a little late because of my accident. In the end, the horchata turned out pretty well. The texture was slightly grainy since during my mess-up some of the meal dropped back into the liquid and I didn’t feel like draining it again. It was VERY sweet so we just kept adding water to taste.

Our friend Melanie also came over that day and we made crackers. Yes, we MADE crackers. Melanie doesn’t eat anything with corn or meat, and John is vegan. We really didn’t have much food in the house that we could have at the time that we could whip up quickly and enjoy at 9 pm. I had just gotten some wonderful homemade hummus from my cousin Nikki so we decided to try a cracker recipe to go with. I would say it was semi-successful. The crackers weren’t as crunchy as I would have liked, but they tasted pretty good. Ok, one last food picture! Yesterday I decided I wanted burgers. We had everything we needed for bean burgers but no buns. I was feeling to lazy to go the store so I tried a recipe I found for homemade burger buns. I have to say the turned out really well! The best part is that they were fast. The recipe says to let them rise for 10 minutes, but I let them rise for 30 minutes. I thought they would also taste yeasty, but they didn’t.

Yum! Skimmies says he’s hungry and wants more food too.

John is making dinner now and I’m excited to see what it is! In the garden, the beets are starting to come up as well as the peas. The lettuce hasn’t emerged yet and we’re a little worried. We may have to replant. Until next time, eat well everyone!

  1. Thanks for linking up and making the horchata. Dear Lord woman, you had a TIME of it with it! I am sooooo sorry about the mess. I dropped an entire bottle of glass caramel sauce once all over my kitchen and for about a year later, I was STILL finding caramel sauce in nooks and crannies.

    And yes, horchata in Mexico is SWEET! They like their sweets 🙂
